Try it Tuesday |Chocolate Chip Peanut Butter Gluten-Free Cookies

I’m not gluten-free, but I do try to watch how much gluten I eat. I found this really delicious recipe for gluten-free cookies that are so easy to make. Plus it’s so nice to make them for gluten-free friends at gatherings.
CHOCOLATE CHIP PEANUT BUTTER GLUTEN-FREE COOKIES
Makes 18 Cookies
INGREDIENTS:
1/2 Cup Chunky Peanut Butter
1/2 Cup Brown Sugar
1 Egg
1/2 Teaspoon Baking Soda
1 1/4 Cups Gluten-Free Rolled Oats
1/4 Cup Chocolate Chips
DIRECTIONS
Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
Cream together peanut butter and brown sugar in a mixing bowl until fluffy. Then beat in the egg and baking soda.
Add in the rolled oats and mix well.
Use a cookie scoop to roll 2 inch balls and press down to flatten them on the cookie sheet.
The original recipe didn’t call for chocolate chips, but I like to press a couple into each cookie once they’re on the cookie sheet. I use special dark chocolate chips since that’s what Ben buys.
Bake for 8 minutes or until the cookies turn slightly brown.
