Try it Tuesday: Apple Cinnamon Oatmeal Cookies

Ben and I went apple picking and picked more apples than we knew what to do with! Ben stocked up our freezer with applesauce, made apple crisp and caramel apples. And we still had more apples left so I began searching for apple recipes and came across Cooking Classy’s Apple Cinnamon Oatmeal Cookies.  They are so good and perfect to snack on or even eat for breakfast 🙂

INGREDIENTS

  • 1 1/4 Cups of Flour
  • 1 1/4 Cups Rolled Old Fashioned Oats
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 Cup Unsalted Butter, Softened
  • 3/4 Cup Packed Light Brown Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 Cup Finely Chopped Peeled Granny Smith Apple (1/4 inch cubes or smaller)
  • 2 tsp Lemon Juice

 

DIRECTIONS

  • Preheat oven to 350°. Line two baking sheets with silicone baking mats or parchment paper.
  • Toss the apples with lemon juice in a small bowl.
  • In a mixing bowl whisk together flour, oats, cinnamon, baking soda and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and brown sugar until combined. Mix in the egg and vanilla extract.
  • Add flour mixture to egg and vanilla mixture and mix until combined. Mix in apples with a wooden spoon.
  • Scoop out dough using a cookie scoop and drop on to the prepared baking sheets about 2 inches apart.
  • Bake one sheet at a time for 14-15 minutes.
  • Let cool on baking sheet for several minutes and then transfer to a wire rack to cool completely.
