Try it Tuesday: Ice Cream Cupcakes!

So these are fairly easy to make and really yummy! :0) I found this recipe on Pinterest and modified it just a little bit so I really only had to buy the Cool Whip and chocolate sauce.

Ice Cream Cupcakes- Makes around 12 (perfect so you only have to use one cupcake pan!)

Ingredients:

  • Oreos (I used around 24 which is two sleeves of a pack of Oreos)
  • 3 Tbs of Butter melted
  • Ice Cream (You can use any flavor you’d like I chose vanilla)
  • Cool Whip
  • Hot Fudge sauce

Directions:

Crush the Oreos! (Icing and all…I know sad) I put them in a Ziploc bag and used my rolling pin. Put some of the crushed Oreos to the side to use as topping later on. Mix the rest of the Oreos with the melted butter.

Line the cupcake pan with cupcake liners (I used silicone ones that I got from my shower!) and then put about a tablespoon (or a little more) into each cupcake liner. Then use the bottom of a cup to press down on the Oreo/butter mixture.

Take a scoop of ice cream and place it in each cupcake liner and use the back of the spoon to kind of flatten the ice cream. I then put another thin layer of Oreos down and flattened with the bottom of the cup again. Then I put a layer of Cool Whip down and sprinkled Oreos on top.

Then I just put the cupcake pan in the freezer until I was ready to serve the ice cream cupcakes. When I took the pan out to serve them I heated up the hot fudge a little bit and put it in a plastic baggie. I cut a little hole in one of the corners of the baggie and used it to drizzle the hot fudge across the cupcakes!

See pretty easy! Plus there’s no baking…so no chance of burning yourself! :0) And they end up being kind of little so you can totally have two! Or just use the larger cupcake pans!
