Blackberry Brie Bites are one of my favorite appetizers to make for hang outs and parties. They’re really easy to make and you don’t even need to mix anything in a bowl. All you need is a cutting board and a mini muffin tin!
BLACKBERRY BRIE BITES
Makes 24 Bites
INGREDIENTS:
1 Tube of Refrigerated Crescent Rolls (8 oz.)
1 Round of Brie Cheese (8 oz.)
1/4 Cup of Blackberry Jelly
24 Fresh Blackberries (I always buy 2 packs because it doesn’t look like enough, but you actually only need 1 pack)
24 Toothpicks
DIRECTIONS
Separate the crescent rolls into the 4 rectangles. Then on a cutting board press the seams together of the 2 triangles within each rectangle.
Cut each crescent roll rectangle into 6 even squares (I use a pizza cutter for this) for a total of 24 squares. Press each little square into 24 mini muffin tin.
Cut the rind off of the brie cheese and then cut into 24 pieces.
Place one piece of the brie cheese in each mini muffin tin.
Spoon a small amount (I’d say about 1/2 teaspoon) on top of each cheese square.
I then fold the four corners of each crescent roll in towards the jelly so that the crescent roll bakes around the brie and jelly.
Bake at 350 degrees for 12-15 minutes or until the crescent roll is golden brown.
Remove from the oven and use a spoon to remove the bites from the tin and place on your serving tray.
Top each bite with a blackberry and insert a toothpick to hold everything in place.
Serve immediately and enjoy! They’ll go fast : )
