I love recipes that look like a lot of work, but are actually really easy to make. These S’more Cookie Bars are that type of recipe and are really easy to take as dessert. Plus when you buy a bag of Hershey’s Kisses and marshmallows, you actually have enough to at least make this recipe twice. : )
S’MORE COOKIE BARS
Makes 24 Cookie Bars
1 1/2 Cups All-Purpose Flour (Plus more for dusting)
1 1/2 Cups Fine Graham Cracker Crumbs
1/2 Tsp Salt
1/2 Tsp Baking Soda
1 Cup Unsalted Butter Softened
2/3 Cup Packed Light Brown Sugar
1/2 Cup Sugar
2 Large Eggs
2 Tsp Vanilla Extract
12 Large Marshmallows Cut into Halves
24 Milk Chocolate Hershey’s Kisses Unwrapped`
Preheat oven to 350º. Grease a 9″x13″glass dish and dust with flour.
In a bowl whisk together flour, graham cracker crumbs, salt and baking soda.
In the bowl of an electric stand mixer blend together softened butter, brown sugar and granulated sugar until well combined. Scrape down the sides of the bowl, add egg and vanilla and mix again.
Scrape down sides of bowl and, with mixer set on low, slowly add in the flour mixture until combined.
Put dough into the greased and floured pan and spread it out evenly. Then let sit for 5 minutes so that the butter has time to soak into the crumbs.
Bake for 15 minutes or until center appears slightly under-baked and the edges are set.
While the pan is baking cut marshmallows into halves and unwrap Hershey’s Kisses.
Remove pan from oven, quickly add marshmallows evenly spaced out in four rows of six.
Return the pan to the oven and bake for another minute longer or until marshmallows begin to melt and puff.
Remove pan from oven and gently press one Kiss into the center of each marshmallow.
